Welcome in the New Year with classic Japanese New Year dishes, or osechi ryori. Kuri kinton is a sweeter osechi ryori dish, made by combining mashed satsuma imo (Japanese sweet potatoes) with candied chestnuts. Once made, the dish has a distinct golden yellow colour, which symbolises wealth, prosperity, and good luck. This makes kuri kinton a particularly important New Year's dish, as well as a tasty one.

Ingredients

200g sweet potato
100g candied chestnuts in syrup
1-2 tsp sugar, to taste

How To Prepare

  1. Peel the sweet potato and cut into even-sized chunks. Boil until soft, about 10-15 mins. Test the softness with a fork. When soft, drain and mash with half of the chestnuts.
  2. Reserve one half of a single chestnut to top. Finely chop the remaining chestnuts and reserve the syrup.
  3. Add the chopped chestnuts and the reserved syrup to the mashed potato and chestnuts. Mix gently.
  4. Taste for sweetness, and add 1-2 tsp sugar if necessary.
  5. Serve topped with the reserved chestnut half with other osechi dishes for New Year’s.
