Serve something a little different to standard boiled rice with this Japanese style peas and rice recipe. This side dish derives its flavour from the combined umami of the green peas and the dashi seasoning, with a little salt and Japanese sake for depth. As simple as it sounds, this dish is exceptionally flavoursome and a great accompaniment to meat, fish, and vegetable dishes.


360g rice
400ml water
150g peas
1 tsp dashi stock
1/2-3/4 tsp salt
1 1/2 tbsp sake
1 1/2 tsp mirin

for boiling the peas:
250ml water
1 tbsp sake
1/2 tsp salt

How To Prepare

  1. In a small saucepan, bring 250ml water to the boil. Add the sake, salt, and peas. Cook on medium heat for 5-10 minutes. Cover with a lid and leave to cool.
  2. Once it has cooled down, drain, retaining the water for use later.
  3. Transfer the peas into a container with 1-2 tbsp of the remaining water and set aside.
  4. In a rice cooker, add the rice, 400ml water and the retained water from the peas, dashi, salt, sake and mirin. Lightly stir the mixture and cook on the regular white rice cycle.
  5. Once it has finished, leave the rice for 10-15 minutes to fluff up in the rice cooker.
  6. Finally, add the peas into the cooked rice and stir well. Serve warm as part of any meal or with miso soup for a light lunch.
