Create a spectacular-looking, great-tasting chirashi sushi with a twist using this easy chirashi sushi cups recipe. A different take on a Japanese favourite, these cups take the eye-catching colours and delicious flavours of chirashi sushi, and presents it in convenient single-serve cups. Beautiful enough to serve at dinner parties, yet easy enough to enjoy for morning or afternoon tea.
Prepare sushi rice first. If you need directions see our how to make sushi rice recipe. In individual glasses, place the rice and other ingredients in thin layers, probably 4-5 layers alternating sushi rice and toppings.
Once you have filled the container almost to the top, top with the kinshi tamago and arrange the toppings such as smoked salmon, ikura, cucumber slices, prawns and/or sliced avocado. Serve as a side or snack food at parties.
Tips and Information
- If sakura denbu is not available, you can use boiled cod fillets, roughly 2, and then pulse them in a food processor. Then in a frying pan place the processed cod, and 1 tablespoon of mirin and cooking sake, and a little salt. Add some red food colouring and cook until all the water has evaporated from the boiled cod and it becomes nice and fluffy. Then add about 30g of sugar to give it that authentic sakura denbu taste.
