Experience pan-fried chicken as you have never experienced before with this simple recipe. Miso, made from fermented soy beans, contains enzymes that will tenderise surrounding food and produce a richer umami flavour. This recipe involves marinating chicken in a miso and mayonnaise dressing overnight, allowing the enzymes in the miso so get to work and create a juicier and more flavoursome chicken dish. Enjoy for lunch or dinner.


300g chicken breast
pinch of salt and pepper

miso mayo dressing:
1 tbsp mayonnaise
1 tbsp miso
1 tsp soy sauce

How To Prepare

  1. Mix the miso, soy sauce, and mayonnaise to make the miso mayo dressing.
  2. Season the chicken with salt and pepper, marinade the chicken with miso mayo dressing, put them in a resealable bag, and refrigerate overnight.
  3. Heat oil in a frying pan and cook the marinade chicken.
  4. Place your choice of vegetables on a plate. Slice and arrange the chicken on top.
