Chicken and Soybean Nuggets

Golden crispy chicken nuggets are certainly alluring, but can they be healthy? We believe we’ve found a way with this recipe, which blends chicken breast and soy beans for a lighter nugget that’s still super tasty. We recommend you serve with a selection of your favourite dips.

Ingredients

150g chicken breast
200g tin soya beans
1/2 tsp salt
frying oil

(a)
1/2 egg
pepper
nutmeg

(b)
1 egg
45ml milk

(c)
150g flour
1/4 tsp salt
1-2 tsp garlic powder
pepper

How To Prepare

  1. Put the chicken breast into a food processor and blend till it forms a paste.
  2. Add the soybeans and salt to the meat and blend again.
  3. Put the meat and soybean mixture in a bowl and add ingredients from (A) and mix well.
  4. Make small chicken leg shapes from this mixture and set aside.
  5. Now, put ingredients (B) and (C) into separate bowls and mix well.
  6. Dip the chicken shapes into (B) and coat in (C).
  7. In a frying pan, heat the oil and fry for 2 minutes until golden brown. Enjoy.
