Edamame-Studded Black Rice With Yuzu Dressing

Enliven your rice dishes with this edamame black rice with yuzu dressing recipe. The perfect accompaniment to a beef steak or tofu burger, this recipe brings the roasted nutty flavour of black rice, the salty flavour of edamame and the refreshing tang of yuzu together for a healthy and original Japanese side dish.

edamame salad
150g of black rice
150g of edamame
2 spring onions, finely sliced

yuzu dressing
2 tbsp of vegetable oil
1 tbsp of yuzu juice
1 tbsp of sake
1 tsp soy sauce
1 tsp ginger

How To Prepare

  1. Cook the black rice according to packet instructions.
  2. Meanwhile, place the oil, yuzu, sake, soy sauce and ginger into a jam jar and shake until all the ingredients are combined.
  3. Tip the warm rice into a mixing bowl and stir 2 tablespoons of the dressing through it. Stir in the edamame beans and spring onions.
  4. Reserve the remaining dressing to drizzle over the fillet of steamed fish or seared meat to lay on the bed of rice.
