Enjoy a warming soup from the Japanese experts in Winter warmers with this Sapporo style soup curry recipe. This fragrant, spicy dish originated in Sapporo, Hokkaido, one of the snowiest places on earth and by far the coldest place in Japan, which means that this dish's warming qualities have been liberally put to the test. This hearty soup is perfect for serving as a main meal.


2 potatoes
1 carrot
2 small aubergine
4 pieces baby corn
2 pieces lotus root
2 boiled eggs cut in half
1 green pepper
200g rocket
2 tbsp butter
3 cloves garlic
amall piece ginger
2 red onions
2 bay leaves
1 tbsp cardamom powder
1 cinnamon stick
2 tablespoons curry powder
200ml chopped tomatoes
300ml chicken stock
1 tbsp soy sauce
1 tbsp tomato ketchup
1 tbsp dashi stock
2 large chicken legs
2 fresh chilli, chopped finely
1 tbsp mango chutney
1 tsp sea salt
chilli flakes (optional)

How To Prepare

  1. First up, prepare the vegetables. Chop the the aubergines into half lengthways, the carrot, green pepper and potato into quarters and mince the onion, garlic and ginger.

  2. Melt the butter in a pan and sautee the onions for at least 8 minutes, stirring regularly. This process adds oodles of flavour to the dish.

  3. At this point add the garlic, ginger, chicken, aubergine, carrot, curry powder and cardamom powder. Stir for another 2-3 minutes.

  4. Pour over the chopped tomatoes and chicken stock and bring to the boil. Subsequently add the chilli, tomato sauce, soy sauce, dashi stock, mango chutney, bay leaves and sea salt. Stir well and reduce to a simmer. Leave for 30 minutes. If you need to make rice, now’s the time.

  5. Return to your now fragrant soup curry. Taste your concoction and add more chilli flakes to taste. Add the baby corn and cook for another ten minutes, after which your curry should be ready to serve.

  6. For authentic presentation, make a pyramid at the bottom of your bowl using potatoes, carrot and chicken. Then fill with the soup and delicately arrange the rocket, pepper, egg and lotus flower on top. Sprinkle with chilli flakes and enjoy.

Tips and Information

If you enjoy a creamy texture and the delicate flavour of coconut, add 200 ml of coconut milk at stage 5 and increase cooking time by 10 minutes.
