Add rich umami flavour to mixed vegetables with this miso vegetable stir fry recipe. As well as being essential for making miso soup, miso is one of those Japanese flavour staples that works well in marinades and dressings, and as a preserver for pickling vegetables. Quick, tasty, and containing three of your five a day, this stir fry is ideal for enjoying at lunch or dinner with rice or noodles.


• 1 small aubergine
• 1 green pepper
• 1 carrot
• 50-100g thinly sliced pork
• 1 tsp miso
• 1-2 tsp sugar
• 2 tbsp cooking sake
• 1 tbsp sesame oil
• pinch of salt and pepper

How To Prepare

  1. Chop aubergine, green pepper and carrot into bite-size pieces.
  2. Warm sesame oil in a frying pan. Stir fry pork over a medium heat for approx. 5 minutes, or until it just changes colour. Sprinkle with salt and pepper and leave to one side.
  3. In the same pan, stir fry carrot and aubergine for approx. 3 minutes, or until slightly softened. Add pork back as well as green pepper and stir fry for a further 1-2 minutes.
  4. Add miso paste, sugar, and cooking sake. Stir through before serving.

Tips and Information

- You can mix miso, sugar and cooking sake beforehand in a bowl.
