If you find most standard 'dark' soy sauces too strong in flavour, or if you want to try a slightly different soy sauce, Higashimaru's light soy sauce is where you should set your sights. Based on the soy sauces originally invented in Japan's Kansai region, this soy sauce has been made with more salt than dark soy sauces, allowing for a flavour that is both saltier and less fermented. This sauce goes particularly well with Kansai cuisine, or with foods requiring more subtle umami flavours.
