Kara age is a relatively recent addition to the Japanese food repertoire, but there is no doubt that it will be here to stay for a long time yet! Traditionally made by marinating pieces of chicken in soy sauce, mirin, and other spices, coating them in flour, then deep-frying them to crispy perfection. If you’re after something a bit simpler, try using any of the special kara age flours available at Japan Centre.

How To Use

To make unbeatably spicy kara age chicken:
• Cut 400-500g chicken thighs into large bite-size pieces. Put into a bowl and add 50ml milk. Mix well until the chicken has been well-coated.
• Add entire packet of kara age flour to the bowl and mix everything together until the chicken is well-coated with the flour. Leave to rest for 10-15 minutes.
• Drop chicken pieces into a saucepan of oil at 160-170 degrees celcius, five or six pieces at a time. Allow to fry for 3 minutes, then remove and let drain.
