A traditional Japanese dessert worth bringing into the modern world! This ogi yokan, made in West Kyushu using the finest ingredients, is a little different from other varieties of yokan in that it has a thin film of sugar around the outside that becomes crusty over time, giving the yokan some added crunch. Yokan is one of the most well known traditional Japanese desserts to have survived to the present day. It is a cake with a jelly-like consistency (although yokan is slightly chewier and heavier), made from mashed sweet azuki red beans and kanten (a gelatin-like substance made from seaweed).
