Kobucha, or kombu kelp tea, is different from most other Japanese teas in that it does not contain actual tea leaves. Instead, kobucha is an infusion of kombu kelp seaweed, which is high in umami and yields a savoury flavour. Because of this kobucha can also be used like dashi soup stock and added to soup and noodle dishes.
