Unlike other varieties of kombu more suitable for making dashi soup stock, this kombu is best used to make delicious, umami-rich wraps.

How to make delicious kombu-wrapped side treats!
• Soak kombu in plenty of water for around 15 minutes.
• Cut into strips 10-15cm long. Lay out whatever meat and vegetable fillings you along one edge, and roll up tightly. Hold together with a strip of tied up gourd or with a couple of toothpicks.
• Place these wraps into a pot, along with three cups of dashi, a tablespoon of sake, hald a tablespoon of sugar and two tablespoons of soy sauce. Cover and allow to simmer for around 50 minutes.
• When the liquid has almost all gone, add half a tablespoon of mirin rice wine and allow to simmer for a little longer before serving.
