Dried vegetables are something of a strange concept in the modern Western world as drying practices gave gone out of style. In Asian countries, however, vegetables are still freely available in dried form, making them easy to keep preserved. Shiitake mushrooms and shredded mooli are among the most commonly available dried vegetables.
How To Use
To make a tasty side dish with dried shredded mooli:
• Reconstitute the dried mooli, either by submerging in cold water for an hour then rinsing, or by blanching in hot water for a couple of minutes.
• Heat up some oil in a saucepan. Add reconstituted mooli and stir fry. Add some deep fried tofu (abura age) and stir fry well, then add plenty of dashi.
• Add sugar and soy sauce to taste and allow to simmer until most of the dashi is gone. Enjoy!
