How To Use

This traditional seasoning is easy to use.
• Cover your meat, fish or vegetables with roughly 100g of shio koji per 300g of food you are marinating. Leave to marinade overnight in the fridge.
• For vegetables just wipe off the koji and enjoy straight away.
• For meat, cook well after wiping off the koji and then enjoy.

It's the first time I've tried this brand. It's a very subjective thing, but this smells much more like my home-made shio koji than the one I normally buy (Marukome). That might make a difference in dressings etc, but not in cooked foods. It's very good value. I never cook chicken without shio koji these days, and it's brilliant for fish.
