An Osaka and Hiroshima delicacy, okonomiyaki can best be described as a filled savoury pancake. This bonito and kelp subtly flavoured wheat flour (with added yam powder) is the base to your pancake, from which you can add whatever you like to create your own taste. So much fun to make, a firm Japanese favourite, try it out for yourself with a frying pan, hotplate or griddle.

Background

Okonomiyaki literally means ‘grilled as you like it’. A speciality of the Osaka region, okonomiyaki pancakes are a delicious savoury dish that’s simple and quick to make. Very versatile, okonomiyaki is usually made with squid, prawns, aonori, katsuobushi, shredded cabbage, beansprouts, spring onion, egg, mayonnaise and brown sauce… or whatever you like!

How To Use

For delicious and authentic tasting okonomiyaki:
• Add 100g of okonomiyaki flour, 120ml of water and break 1 egg into a bowl and mix well to get rid of any lumps. Add cabbage and other chosen ingredients and mix further.
• Add a dash of oil to your hotplate or frying pan and spread evenly. Pour the okonomiyaki mixture onto the plate or pan and grill until lightly browned. Flip over and repeat.
• Top off with lashings of okonomiyaki sauce, mayonnaise and a sprinkling of aonori and dried bonito flakes.
