Clearspring Dried Lotus Root Slices, 50 g
Known in Japanese as renkon, this is actually the rhizome, not the root, of the water lily Nelumbo nucifera. It is a versatile vegetable that can be simmered or deep-fried as tempura. This crunchy vegetable has a centre of many holes, like a wheel. Clearspring’s packet of sliced renkon is produced by cutting the root and leaving it to dry in the winter sun.
