Once left to cool after cooking, these flavoursome noodles will be perfect for soaking up the hot, tasty broth of bonito fish, sardine and mackerel.

Background

Tsukemen noodles are something like the cold noodle equivalent of hot ramen bowls. Tsukemen are usually enjoyed during the summer months, with the noodles served on a ‘zaru’ bamboo wood tray or on top of a bed of ice, and the hot dipping soup served in a small, separate side bowl. How To Use

• Add noodles to 2L boiling water on the stove. Loosen until noodles are completely submerged and allow to cook for 12 minutes.
• Meanwhile, dilute 1 sachet of soup with 120ml boiling water to make the dipping soup.
• When noodles are done, strain and cool by rinsing in cold water.
• Serve noodles on a zaru tray or plate, with ice cubes for extra coolness. Serve with dipping soup on the side, and add your favourite meat and vegetable toppings as desired.
