From the long-established Shimizu Seizaburo Shoten brewery of the Mie prefecture comes this high-quality, authentic junmai sake. Every stage in the process of making this rice wine has been carried out with the utmost care. The rice koji is hand-grown and smaller tanks are used for the fermentation with experts on hand to monitor conditions exactly. The fermentation takes place for a longer period at lower temperatures to allow for a more delicately fragrant sake. This sake has a delightfully fruity scent with a clean and refreshing aftertaste. Enjoy chilled or warmed to 35-40 degrees.
