Essential Japanese flavours.

Bring Japan's most recognisable flavours into your cooking with these dried katsuobushi bonito flakes. Made using specially selected skipjack tuna fish from Bretagne, France, the fine umami savoury taste of these thinly shaved bonito flakes are ideal for making dashi soup stock or sprinkle onto okonomiyaki or takoyaki.

ITEM ID: #13038

Bonito fish flakes are arguably one of the most crucial basic ingredients in most Japanese cuisine. These paper-thin shavings of dried fish are the most commonly-used ingredient for making dashi; the umami-rich soup stock that goes into nearly all Japanese soups, noodle dishes, sauces and seasonings. For a great range of dashi made from a variety of different ingredients, check out Japan Centre's Dashi & Noodle Stock selection.

How To Use

To make 500ml of dashi broth:
  1. Bring 500ml of water to the boil.
  2. Add 20g of katsuobushi flakes.
  3. Let it sit for 1-2 minutes until the flakes sink to the bottom of the pot. Strain off the broth using a paper towel-lined sieve.
  4. Dashi broth is ready to use for miso soup, noodle soup etc.

The bonito flakes are fresh and perfect for making dashi
very good
I mix with a pinch of Thai 7 spice powder and a few drops of tamari and use to fill rice balls.
Just what I wanted!
I use these to make Dashi for Miso soup. They are easy to use, and tasty. Quality seems good to me, but I am new at Japanese cookery!
Making dashi; superb
Not as good as the other brand but still amazing.
