Background

Udon are among the most widely enjoyed noodles in Japan. These noodles are normally much thicker than other Japanese noodles such as soba or ramen, with a distinct chewy texture that makes them particularly ideal for enjoying with denser, thicker sauces. How To Use

• Bring a sauce pan of water to the boil (3 litres for 250g of noodles). Place the noodles in the saucepan and allow to cook for around 8 minutes. Remove from the heat and let it rest for a further 2 minutes.
• Drain the soba noodles through a sift and run it through cold water.
