For the perfect rice dough.

Complete your traditional Japanese dishes with Kimura's Usagi rice flour. Known as 'shiratama ko' in Japanese, this flour is made from 100% glutinous mochi rice. Just add water and you will have a perfectly delicious, soft mochi rice dough, which can be used to make mochi rice cakes, dango dumplings, zenzai and oshiruko dumplings, and other soup ingredients and desserts.

ITEM ID: #11226

Background

Shiratama ko is a powder made of sweet mochi rice that has been rinsed, soaked, crushed and dried to make a key ingredient for Japanese baking. Think of it as a sort of ‘instant mochi’. Mochi is used in Japanese cooking as an ingredient in a variety of traditional Japanese dishes, particularly desserts. For a great range of flours commonly utilised in Japanese cooking, take a look at japancentre.com's Flour & Panko section.
