Okonomiyaki is one of Japan’s most well-known and well-loved festival foods. It is made from seasoned flour, cabbage, egg (for binding) and any variety of meats and vegetables. These ingredients are all mixed together and cooked on a hot plate, just like a pancake. They are then smothered in delicious okonomiyaki sauce and other toppings. How To Use

• Add 80g okonomiyaki flour to 140ml water in a bowl and mix well. Add 300g chopped cabbage (about half a head), 10g chopped spring onions, and 40g sliced pork into the mix and stir well.
• On a hot plate or saucepan over a medium heat (200C), spoon out the okonomiyaki batter into bite-size (approx. 5cm in diameter) pancake shapes and allow to cook for approx. 4 minutes. As they start to turn brown on the underside, lay bite-size pieces of thinly sliced pork across the top.
• Carefully turn the pancakes over and cover with a lid. Allow to cook for a further 4 minutes.
• Remove lid and flip over once more. Allow to cook for another 4 minutes or until cooked through to the centre.
• Transfer to plates and serve with okonomiyaki sauce.
