Known in Japanese as 'takuan', this pickle has a naturally delicate flavour, made possible by the use of mooli radishes from Murayama city in Yamagata (a prefecture well-known for its high quality produce), as well as the special attention paid towards preserving the mooli's natural flavours during the pickling process. Slice this radish up and serve on its own or with rice.
