A Chinese classic done Japanese style.

It is said that the women who first created this dish had freckles on their faces. The dish was therefore named mabo (or mapo), combining the Chinese words for 'freckled', or alternatively for 'hot and spicy' ('ma') and 'aunt' or 'grandma' ('bo'). Extremely popular in China and Japan, and generally enjoyed with an ice cold beer. Stir fry pork, beef or chicken mince, add the Mabo Tofu mix and tofu, stir, simmer and add spring onion.
