The easiest, purest way to make great-tasting dashi. This pack contains three teabag-style bags filled with dried shiitake mushrooms. To make dashi, simply add one teabag to several litres of cold water and leave in the fridge for 24 hours, or until the dashi has reached your desired strength. Don't forget to take the bag out before using the dashi for cooking.

Dashi is arguably the ultimate secret in Japanese cooking. It is a stock made from certain ingredients known to be high in umami (with bonito fish, kombu kelp seaweed, sardines and shiitake mushrooms being the most commonly used ingredients). Dashi is added to soups and stews in order to give them a flavour base which can then be built on. Try using dashi instead of water the next time you cook and see what a difference it makes to the flavour of your food.
