Ume Plum Seasoning is the sour/salty juice left from the pickling of umeboshi (salt-pickled plums). While popular in Japan, its qualities have yet to be fully appreciated in the West. It is, however, a useful and unique way to get a hint of saltiness into sauces and dressings without the need for added salt.
