Japanese cuisine boasts a long and in-depth history of pickling, and the incredible variety of pickled dishes available in modern Japanese cooking is testament to this. This pickled turnip recipe uses yuzu citrus seasoning to give the finished pickles a refreshingly sharp, citrus quality. Serve on the side of savoury dishes to provide a flavour contrast.

Peel and cut the turnip into quarters then thinly slice. Peel and thinly slice the carrot.
Combine the sushi vinegar, yuzu seasoning and takanotsume chilli pepper in a small resealable bag/container. Add the sliced turnip and carrot. Mix the turnip and carrot by hand to spread the pickling marinade in the bag/container then seal. Make sure the vegetables are evenly covered by the pickling marinade.
Leave to marinate for at least 20 minutes. Serve as a side.
