Soba Noodles

Soba noodles are made from buckwheat flour which makes them the healthiest of all the Japanese noodles, rich in fibre and vitamins. Originating in Yunnan, China, soba has been eaten in Japan for centuries and is a popular meal for families on New Year’s Day. Try soba noodles hot in a tasty tsuyu soup, or chilled with a tsuyu dashi based dipping sauce for a cool Japanese summer meal. For the adventurous amongst you, look out for special soba varieties like soba with green tea or red shiso.
