More than just a favourite of vegetarians, tofu is enjoyed by everyone due to its great taste and excellent health benefits. It is commonly found in miso soup, but can also be boiled in a hot pot, added to a stirfry, or even made a tasty burger! Made from soy milk, tofu is a versatile ingredient that absorbs the flavours of anything it is cooked with, making it very useful for all types of Japanese recipes.
Tofu comes in two main varieties, normal and silken! To make it more confusing, both of these varieties also come in firm, medium or soft types! Normal tofu is pressed using cotton which leaves a textured pattern on the outside and is generally more solid than silken tofu, which tends to be a lot smoother and creamier.
This recipe uses a firm silken tofu, but a normal firm tofu can also be suitable. Soft silken tofu is less suitable for this recipe it is harder to form into the preferred shape, but can be used in a pinch. Our tofu burger recipe is 100% vegetarian, but if your carnivorous side is calling, you can also add some extra meat too! We think that you will love this recipe, no matter your tastes!
Ingredients from Japan Centre:
• Firm Tofu – Half a Packet
• Panko Breadcrumbs – 70g for the veggie version, 50g if you add extra meat
• Miso Paste – 1/2 Tablespoon
• Mayonnaise – 1/2 Tablespoon
• Worcestershire Sauce
• Boiled Edamame – 50g
Other Ingredients
• Carrot – 1
• Onion – 1/4
• Egg – 1
Make it a Meaty Tofu Burger
• Minced Chicken or Turkey – 150g
Begin by cutting the onion and carrot into very small pieces, then stir-frying them in a pan or wok with a little cooking oil. Once they are cooked, set them aside for later.
To prepare the tofu, drain any excess liquid before mashing it with a cooking spoon in a bowl. Add the panko and mix together well before adding the vegetables, egg, miso paste, mayonnaise and the meat, if you are going for the meaty version. You can also add a little salt and pepper to taste here if you like. Make sure that the ingredients are mixed in evenly and the tofu becomes as smooth as possible.
Once your tofu mix is ready, divide it into 6 equally sized pieces and press them into burger shapes with your hands.
Finally, heat a little cooking oil in a pan and cook your tofu burgers on a low to medium heat for approximately 3 to 4 minutes each side. Serve with a generous squeeze of Japanese style worcestershire sauce and some freshly boiled rice or a salad on the side!
• If you are having trouble forming the burger shapes, try adding some more panko breadcrumbs to make them more solid and easier to shape.
• No worcestershire sauce in your cupboard? You can use soy sauce, ponzu, tomato sauce or even some ratatouille as a tasty replacement. Worcestershire sauce also contains anchovies so is not suitable if you want a 100% vegetarian option.
