A tin of chicken and pork solid soup stock, Chinese style. This rich paste stock is used as the base in popular noodle dishes such as ramen and great for making tonkotsu ramen in particular. Also you can use it for making fried rice, fried vegetables and gyoza (Chinese dumplings), very useful! Made with chicken, pork, onion, garlic and spices.
Dashi and other stocks are hugely versatile ingredients that are the basis for many dishes such as noodle soup or mixed with miso paste for miso soup. Traditionally made from katsuobushi bonito flakes and konbu kelp strained together amongst other methods, instant varieties are much quick and easier to prepare.
To add a Chinese flavour to your cooking:
• Add 1 tbsp per 750ml of water for soups.
• Add 1 tsp on its own to fried dishes and 1 tsp on its own to gyoza filling.
• Add 2 tbsp to stew bases for a Chinese twist.
