Liven up your noodle life! Tried of soba noodles with bonito dashi, why not try this deliciously different way of enjoying them? This excellent combination of slurpably springy and chewy buckwheat soba noodles, with mellow and delicious duck dashi soup can be enjoyed as either dipping noodles or soup noodles! Serves 2.
Soba noodles are made from buckwheat which gives them a grey/brown colour and much better health benefits than other types of noodles. They are often eaten chilled and served on a special bamboo plate or in a hot, dashi based tsuyu soup.
You can easily enjoy this soba two ways:
• To make soup noodles: Without opening, place the stock sachet in a bowl of warm water to heat it up. Bring 500ml of water to the boil and add the soba noodles. Boil for a further approx. 5 mins. Stop the heat and add the soup stock.
• To make dipping noodles: Without opening, place the stock sachet in a bowl of warm water to heat it up. Bring 1l of water to the boil and add the soba noodles. Boil for a further approx. 7 mins. In a separate bowl add the soup stock and 80ml of hot water. Rinse the noodles and drain well.
