Harusame are dried starch noodles, originally made from mung beans, there are now lots of different varieties to choose from. These translucent noodles have a slightly slippery texture and although flavourless, readily absorb flavours and add a pleasant texture to soups, salads, stir-fries and even desserts.
To quickly make these harusame noodles:
• Put the harusame noodles and the soup into a bowl.
• Add approx. 160ml hot water and stir well for 10 seconds.
• Leave for 3 minutes, garnish with any other toppings you like and serve!
